Set between the alleys and the alleys of the Earth, the historic center of Ostuni, theLost Time Osteria in via G. Tanzarella Vitale 47, is one of those addresses to be marked on the agenda and carefully guard.

Where to return whenever you are passing through this area of Puglia and you want a full immersion in the flavors of the local tradition, or to report to friends, make sure to look good.
I was there on my recent tour in Valle d'Itria and I was pleasantly surprised, both of the setting and of the kitchen.
Two entrancesLost Time Osteria, which lead to as many distinct rooms: one with tables set in a sort of museum of peasant civilization, more suitable for group or family lunches; the other, decidedly more suggestive, set in a cave of 1500, perfect for romantic dinners at two. The kitchen is the same and on that go on the safe.

If you are not familiar with local specialties, entrust yourself to the suggestions of the waiter or, better yet, have a taste of the menu of the day and have a dinner with flakes.

So we also did, in an early November evening, and on our table they started to parade real delights like the Capocollo of Martina Franca, known and appreciated already in the days of the Kingdom of Naples and today Slow Food Presidio.
And then burratine, eggplant parmigiana, cardoncelli mushrooms tegamino in bread crust, stuffed zucchini, zucchini tempura with caciocavallo and anchovies.

To accompany the whole, bread of durum wheat flour and integral semolina with olives and, fail to say, a Primitivo di Manduria.
Among the first, all based on fresh pasta, we then chose the unmancabile strascinati with turnip tops, followed by oven lamb ribs and black pork ribs lacquered with honey with vegetables caponata, and to finish a delicious ricotta cake.
