Driving the restaurant Palás Cerequio, first wine resort dedicated to the cru del Barolo, located in La Morra in the heart of Langhe, open from Wednesday to Sunday for lunch and dinner, to Tuesday only for dinner, even to those who do not stay in the hotel, we find chef Damiano Nigro who manages in full autonomy the place that now bears his name, flanked by compagna Elena Boffa and the second Marco Angeloni.
Its cuisine is "evolutive", characterized by a daily work on the menu and on the chain of suppliers, aimed at the fight to waste and respect of what nature offers, in the constant search for the quality of raw materials to be enjoyed according to seasonality, when they are at the peak of their expression.
"A menu "intensive" rather than "long" – explains Damiano Nigro – a few dishes of identity, executed in a masterful way. An offer that respects my personal taste and the Langhe tradition, trying to amplify the local flavors, not to overwhelm them. I am happy with the proximity and exchange of ideas with the Chiarlo family, which will tie my kitchen even more to the territory. The shared dream is to create a welcoming place, where you really feel at home, pampered by the hands of professionals of hospitality, gastronomy and the great Piedmontese wine". 
In the menu we find the great classics of the Piedmontese tradition, such as Vitello tonnato, Battuta di "Fassona" al coltello, Agnolotti del "plin" ai tre arrosti, Tajarin al ragù di salsiccia, Guancia di "Fassona" cooked soft and Tiramisù to the hazelnut.
The wine list of the restaurant is impressive, with over 100 references, the focus is on Barolo and Barbaresco, present respectively with more than 400 and 100 labels. The paper is explored both in depth, with the verticals of different vintages of the same wine, and in breadth, thanks to the presence of the most important producers of both denominations. Al calice, over 50 wines of which 40 Baroli, open with Coravin. Also at the table there are thematic tastings on the big crus with vertical and horizontal.
Class 1973, toast, before taking the lead of Damiano Nigro in Palas Cerequio restaurant in the Langhe for 14 years was executive chef at the Relais Villa d’Amelia in Benevello (Cn) also conquering a Michelin star, strong of a watering in the kitchens of half world, from Gualtiero Marchesi to Alain Ducasse and Enrico Crippa.
Palás Cerequio, born in 2011 from the renovation of a 18th-century noble palace immersed in the vineyards of the homonymous cru of La Morra, thanks to the foresight of the Chiarlo family, which conceived it as a real "Tempio del Barolo" in which more than 6000 bottles are preserved from 1958 to today. An enoic archive that can always be appreciated through personalized and exclusive tastings, guided by Roberto Stroppiana, director of the structure.
Palás Cerequio is the ideal starting point for discovering the Langhe, recognized by UNESCO World Heritage Site. It offers nine elegant suites: four dedicated to the Past, taking the architectures of the distinct Piedmontese palaces of the eighteenth century, and five dedicated to the Future, designed according to a minimal and contemporary style.
